Banana Colada

I was asked by Innocent to create a mocktail using their coconut water. I thought something fruity would be the way to go, something to brighten up a grey day and get you thinking of warmer places.

Keep it as it is for a nice and refreshing smoothie or add a splash or two of rum to be transported to the beach!

Note: make sure to use a banana that is going brown and spotty as this makes for a much sweeter and tastier drink.

If you know you want to make this, a tiny amount of preparation is needed so remember to think ahead. The day before you need to:

  • Fill an empty ice cube tray with coconut water and freeze to make coconut water ice cubes.
  • Peel and chop up the banana and freeze.
  • Place the carton of coconut cream in the fridge overnight.

Banana Colada

110g frozen Innocent coconut water cubes
1 very ripe spotty banana, frozen
40g coconut cream, chilled
150g fresh pineapple, cut into chunks
Small handful fresh mint
Juice of half a small lime
Innocent coconut water as needed

Place all ingredients in a high speed blender and blend until completely smooth. If your mixture is particularly thick, add a touch more coconut water to get things moving.

Serve immediately, garnished with a slice of lime and a few mint leaves.
