Agua fresca, or fresh water, is a light drink made by blending water with fruit, grains, flowers or seeds popular in Central America.
This version combines strawberries and coconut water, which are both naturally sweet, with zingy lime and fresh mint for a drink that’s particularly refreshing and tasty.
Why don’t you try whizzing up a batch this weekend to celebrate the bank holiday? A splash of gin or vodka will also turn it into a pretty nice cocktail for those heading to Notting Hill Carnival…
380g strawberries + more for serving
850ml coconut water ( I use Innocent’s)
70ml agave syrup
Juice of 1½ limes
Leaves from 3-4 sprigs of fresh mint
Blend all of the ingredients in a high-speed blender until smooth.
If you wish, you can pour the mixture through a sieve to get rid of any seeds but this is not essential.
Store in the fridge and serve cold with sliced strawberries, a sprig of mint and ice cubes (see below for tip), if desired.
Tip: Fill and ice cube tray with coconut water and use these in the agua fresca as they will not water down your drink so much.
