Tahini and date freezer fudge

This fudge is silky smooth, rich, sweet and lightly spiced.

It requires just 3 ingredients for the base (tahini, coconut oil and date syrup), then you flavour and top it with whatever you like. I have shown you what spices I used, but feel free to experiment. I imagine cinnamon would be lovely. The same goes for the toppings. Use whatever you enjoy most/ have to hand!

It literally takes under 5 minutes to mix together, then all you need to do it bung it in the freezer to set. It is really that easy!

Tahini and date freezer fudge (vegan)

INGREDIENTS

255g tahini
85g coconut oil, gently melted
90g date syrup
1 tsp. ground cardamom
1 tsp. ground ginger
1 tsp. vanilla essence
Pinch sea salt

Topping ideas:

Desiccated coconut
Goji berries
Pistachios
Cacao nibs
Dried cranberries
Cashews
Almonds

METHOD

Put the tahini, coconut oil and date syrup into a mixing bowl and whisk together until completely combined. Add the spices, vanilla and a pinch of salt and whisk again.

Pour the mixture into a loaf tin (approx. 8 inch x 5 inch), lined with clingfilm and spread it out evenly.

Sprinkle with your chosen toppings and put in the freezer until set.

Once set, slice into little squares before serving.

The fudge melts quite quickly. You can store it in the fridge and it will hold together but be soft and melty (and delicious), or you can store in the freezer.

This fudge is vegan, dairy free and free from refined sugar.
